Ingredients & process
What does gently processed cacao mean?
Most chocolate is heavily roasted, which can reduce the properties that make cacao so special.
We take a gentler approach - using lower temperatures and less processing, heating just enough to winnow the outer husk. The aim is to preserve as much of the cacao’s natural character as possible, so more of the good stuff stays in the chocolate.
Do you use any ultra-processed ingredients?
We'll keep this short and sweet (just like our ingredients list): when it comes to ingredients we think nature knows best.
No junk. No fillers. Nothing weird. Just quality ingredients chosen carefully to let the cacao shine.
What makes this different from other chocolate?
Most chocolate is built on sugar and shortcuts.
We do things differently. Cacao leads. Real ingredients only. No emulsifiers, no unnecessary extras.
We put more cacao in and keep it gently processed at lower temperatures, so more of the good stuff stays in the chocolate, and you get bold flavour from beans kept close to nature.
That's why our chocolate has big cacao energy.
What kind of sugar do you use?
Cacao is the main character - so we don’t bury it under sugar; generally our chocolate has less than your average bar.
Where we use sugar, we choose it carefully: opting for coconut sugar for our dark range for a more rounded flavour. For our oat range we use unrefined cane sugar for less processed sweetness. And our Blonde based bars are sweetened with chicory root fibre (natural prebiotic) and caramel flakes made from organic cane sugar, gently caramelised for flavour.
What makes cacao a "superfood"?
Cacao’s been valued for thousands of years.
It naturally contains flavonoids and minerals like magnesium.
We keep our cacao as close to its natural state as possible — gently processed at lower temperatures, so more of the good stuff stays in the chocolate.
Are there any allergens I should be aware of?
Yes. None of our products are suitable for people with a nut or peanut allergy. Some products contain nuts, including peanuts, and all are made in environments that handle nuts and peanuts.
We’re dairy-free and gluten-free, but always check the label before eating.

Is the whole range Vegan?
Yes. Our chocolate is certified vegan.
No dairy. No animal-derived ingredients.
Just cacao, plants, and real ingredients doing their thing.
Is Ombar Organic?
Our cacao is always organic, and most of our range is too.
A few ingredients in certain products aren’t organic, such as peanut butter, matcha latte and biscuit crunch. Wherever possible, we prioritise organic sourcing.
Why does Ombar melt more easily than most chocolate?
Because we haven’t engineered it not to.
No emulsifiers, no stabilisers. Just real chocolate.
That means it’s a bit more sensitive to heat, but it’s also what gives it that proper melt.
Do you test for heavy metals?
Our supply chain manager in Ecuador collaborates closely with farmers cooperatives to help us source from regions with low cadmium levels. We can confirm that all our test results show that Ombar chocolate products meet the (EC) No 488/2014 regulation.The latest results from our lab analyses confirm the following:
Cadmium:
- For our 100% Cacao chocolate bar, the level of cadmium is around 0.5 mg/kg of chocolate.
- For our Oat M’lk flavours, the cadmium level is around 0.215 mg/kg of chocolate.
Lead We also analysed the cacao nibs for lead to ensure we are below the threshold assigned by (EC) No 1881/2006 regulation. There is no specific category for chocolate products in this regulation, but the most stringent content limit is applied to Infant formulae and follow-on formula, at 0.020 mg/kg.
- For our 100% chocolate bars, the level of lead was not detectable in lab tests.
- For our Oat M’lk bars, which use cacao from a slightly different region in Ecuador, the level of lead was 0.00172 mg/kg of chocolate.
Do you make your own nut pastes?
Yes! All out nut pastes are ground in our Cambridge factory – this is how we
ensure they have high nut content – and don’t have any fillers or anything
unnecessary (for example, our pistachio 42g bar is 22% pistachios)
What is chicory root fibre?
A natural prebiotic fibre from the chicory plant.
We use it to bring gentle sweetness and keep things smooth, without loading
in sugar or artificial sweeteners.
It helps give that creamy texture, without the overload.

How much is postage?
We match Royal Mail’s delivery costs, so there’s no added mark-up from us.

Why do you pause deliveries in hot weather?
Our chocolate isn’t built for heat, and that’s intentional.
We don’t use emulsifiers or stabilisers, so it melts more easily than typical chocolate.
In warmer weather, there’s a real risk it won’t arrive in the condition it
should.
Rather than send something compromised, we sometimes pause deliveries during
hot periods.
We know it’s not ideal, but it’s to make sure what arrives is exactly how it should be.
What’s your returns policy?
Because it’s food, we can’t accept returns of chocolate.
If something arrives damaged, incorrect or not quite right, just get in touch and we’ll fix it.
We want it to arrive exactly as it should :)
What if I’m having problems tracking my order?
It can take up to 24 hours for tracking to update after dispatch.
If it hasn’t updated after that, email orders@ombar.co.uk and we’ll look into it.
How long does delivery take?
We usually dispatch within 1 to 2 working days.
After that, delivery time depends on the option you choose at checkout.

Why is Ombar more expensive that other chocolate brands?
The reality is, cheaper chocolate often takes shortcuts - from how farmers are paid to the ingredients used.
We want chocolate to feel good: that means paying farmers fairly (we pay higher than fair trade prices), and we only use quality ingredients - no fillers or fake flavours, and that costs more.
Where do you source your cacao?
We source our cacao from Ecuador, working with farmer-owned co-operatives.
We pay higher than Fairtrade prices because we believe better chocolate
starts with better outcomes for farmers.
We also have Paola on the ground in Ecuador, helping us source transparently
and maintain close relationships with our partners.

Our chocolate is made by a small team of taste-obsessives who care about every single bar.
